Low FODMAP Spicy Mexican Bowl!

Get ready for this super simple Low FODMAP spicy Mexican bowl with no bloating...you heard right!! The perfect midweek warmer.

Serves: 2-4

Ingredients:

1 tbl Cobram Estate Onion & Garlic Infused Extra Virgin Olive Oil

500g beef mince

1 carrot, diced

60g corn, frozen

1/2 red capsicum, diced 

1 jar Bays Kitchen Spicy Mexican Stir-in Sauce

To serve

-A dollop of Melbourne Hot Sauce

-A good shake of Umami Pantry Cheez

- Brown or white rice 

Method:

Heat a large pan to medium heat. Add in the oil and mince. Break up the mince with a spatula until browned all over. Add in the diced veggies and stir for about 5 minutes. Add in the spicy Mexican sauce and simmer for about 2-5 minutes.

Serve on rice with extra hot sauce and cheez!

Super hearty and delicious.

Red capsicum - low FODMAP up to 75g per serve
